The Best Gluten Free Waffles

Simple almond flour along with honey and coconut oil give these waffles a delightful flavor, no one will care that they are gluten free.

  • Preheat your waffle iron.
  • In a medium bowl, combine 2 cups almond flour, 1 Tablespoon coconut flour, 2 teaspoons chia seeds, 1 teaspoon baking soda, ½ teaspoon baking powder and ⅛ teaspoon salt. Whisk to combine.
  • Add 2 teaspoons vanilla, ¼ cup honey, ¼ cup coconut oil and 4 egg yolks and mix well. You will have a thick batter.
  • In a separate bowl, beat 4 egg whites until soft peaks form, then stir into almond flour mixture and continue stirring until completely mixed, about 1 minute.
  • Pour batter into preheated waffle iron and bake until deep golden brown.
  • Top with your favorite waffle toppings.
  • This recipe makes two 8-inch waffles.
