Caribbean Spiced Nuts

Use your favorite nuts for this easy, delicious recipe. If making these for food gifts, let sit out overnight after making them to allow coconut oil to harden.

Ingredients

  • 1 teaspoon brown sugar
  • 1 ½ Tablespoons Spice Mix, recipe here also
  • 2 Tablespoons coconut oil
  • 2 cups plain unsalted nuts, such as cashews or almonds
  • ¼ teaspoon liquid smoke
  • Fresh squeezed lime juice from one lime

Spice Mix:

Instructions

  • In a small bowl, mix 1 teaspoon brown sugar and 1 teaspoon smoked paprika, 2 teaspoons paprika, 2 teaspoons kosher salt, 1 teaspoon onion powder ½ to 1 teaspoon cayenne pepper, ¾ teaspoon white pepper, 1 teaspoon freshly black pepper, ½ teaspoon ground thyme, ½ teaspoon oregano together.
  • In a large sauté pan, melt 2 Tablespoons coconut oil over medium heat.
  • Add 2 cups nuts, ¼ teaspoon liquid smoke and 1 ½ Tablespoons spice mix.
  • Saute' for about 5 minutes, stirring occasionally until nuts are toasted.
  • Take off heat and sprinkle another dash of salt over the nuts.
  • When nuts have cooled, squeeze fresh lime juice over the spiced nuts.
  • Store remaining spice mix in airtight container to be used another time.
