Preheat your waffle iron.
In a medium bowl, combine almond flour, coconut flour, chia seeds, baking soda, baking powder and salt. Whisk to combine.
Add vanilla, honey, coconut oil and egg yolks and mix well. You will have a thick batter.
Beat the egg whites until soft peaks form, then stir into almond flour mixture and continue stirring until completely mixed, about 1 minute.
Pour batter into preheated waffle iron and bake until deep golden brown.
Top with your favorite waffle toppings.
This recipe makes two 8-inch waffles.
