Cream Corn
A quick addition to any meal. This turns corn into a very special side dish in under 10 minutes.

In a medium saucepan, simmer the corn and ¼ cup milk over medium heat until corn is tender, about 5 minutes.
Add 3 ounces cream cheese and stir while continuing to cook, another 1 or 2 minutes. Remove from heat and stir until cheese has fully melted and sauce is thick and creamy. Add more milk if you want it less thick.
Stir in 2 Tablespoons fresh chives.
Season with salt and pepper to taste.
Serve immediately.
Alternately, this is better when served immediately but it may be made ahead and reheated before serving, but you may need to add more milk when reheating.
