Strawberry Soup

  • 1 cup apple juice
  • 1 cup water divided
  • 2/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 2 cups fresh strawberries
  • 2 cups 16 ounces strawberry yogurt
  • Additional strawberry halves for garnish
  • Sour cream for garnish optional


  • Combine the apple juice, 3/4 cup water, sugar, cinnamon and cloves in a small saucepan. Bring to a boil over medium heat and stir occasionally until sugar is dissolved. Remove from the heat and let cool.
  • Place the strawberries and remaining 1/4 cup water in a blender and process until smooth.
  • Pour strawberries into a large bowl. Add the yogurt and cooled juice and spice mixture. Stir well to combine. Chill for at least one hour before serving.
  • Pour into soup or dessert bowls and garnish with strawberry slices and a small dollop of sour cream, if desired.
