Fruit Salad with Honey Lime Dressing

This fresh fruit salad is tossed in a light honey lime dressing that brings out the natural sweetness of the fruit, with just a hint of jalapeño for a bright, unexpected twist. It’s easy to make ahead and perfect for summer gatherings, brunch, or keeping in the fridge for a refreshing snack.

Ingredients

  • 3 cups cantaloupe cut into bite-size chunks
  • 3 cups watermelon cut into bite-size chunks
  • 2 cups green or red grapes or combination
  • ¾ cup orange juice
  • 3 Tbsps honey
  • Juice from one lime
  • ½ jalapeno pepper chopped
  • lime zest from one lime
  • 2 kiwis peeled and sliced

Instructions

  • In a large bowl, combine the cantaloupe, watermelon, and grapes.

  • In a small bowl, whisk together the orange juice, honey, and lime juice. Stir in the finely chopped jalapeño and lime zest.
    ¾ cup orange juice, 3 Tbsps honey, Juice from one lime
  • Pour the dressing over the fruit and gently toss to coat.
  • Cover and refrigerate for at least 1 hour, stirring once or twice to redistribute the dressing.
  • Just before serving, add the sliced kiwi and toss gently to combine.
  • Serve chilled with a slotted spoon.

Notes

 
• Finely dice the jalapeño for the best flavor without heat
• Add kiwi just before serving to keep it fresh and vibrant
• Chill at least 1 hour for best flavor
• Use a slotted spoon for serving to avoid excess liquid
