Puree all ingredients except for basil leaves in a blender or food processor. Taste and add more salt, black pepper, honey, or sriracha, to your liking.
1 cup strawberries, ½ cup white balsamic vinegar, ½ cup extra virgin olive oil, 2 tbsp honey, 2 tsp lemon juice, 1 clove garlic, ½ tsp sriracha, salt and pepper to taste
Add the basil leaves and blend until mixed well and no large pieces of basil remain. Serve immediately. Dressing keeps for 5 days in the refrigerator.
½ cup fresh basil leaves
Notes & Tips
• Use ripe strawberries. The sweetness and flavor of your strawberries will determine how vibrant the dressing tastes.
• Frozen strawberries work too. Thaw completely and drain any excess liquid before blending so the dressing doesn’t become watery.
• Adjust sweetness to taste. If your strawberries are very sweet, you may need less honey. If they’re tart, add a little more.
• Try different vinegars. If you don’t have white balsamic vinegar, white wine vinegar or rice vinegar both work well.
• Blend basil last. Adding the basil after the other ingredients helps preserve its fresh flavor and bright green color.
• Shake before serving. Natural separation may occur in the refrigerator—just shake or stir the dressing before using.
• Make it spicy (optional). The sriracha adds a subtle heat that balances the sweetness, but the dressing is still delicious without it.
