Cajun Spice Mix and Rub
Homemade Cajun Seasoning can literally be used on everything- chicken, steak, shrimp, even pasta or rice. This spice mix is mildly spicy. Adjust the heat by changing the amount of crushed red pepper flakes. Very versatile mix to have in the pantry.

Stir all ingredients together and store in an airtight container.
2 teaspoons salt, 2 teaspoons garlic powder, 2 ½ teaspoons paprika, 1 teaspoon ground black pepper, 1 teaspoon onion powder, 1 teaspoon cayenne pepper, 1 ¼ teaspoons dried oregano, 1 ¼ teaspoons dried thyme, ½ teaspoon red pepper flakes,
- Cajun spice rub can be stored in an airtight container for at least 3 months. No need to refrigerate.
- Increase or decrease the cayenne pepper and red pepper flakes to your liking but I don't recommend leaving them out completely. At least a good dash of cayenne adds a nice complexity to the mix without adding heat.
