Healthy Red, White and Blueberry Popsicles

These Healthy Red, White and Blueberry Popsicles are a cool, refreshing treat made with creamy Greek yogurt, sweet strawberries, blueberries, and a touch of honey. They're easy to make, naturally sweetened, and perfect for summer holidays or anytime you want a healthier homemade frozen dessert.

  • If using plain Greek yogurt, stir the honey into the yogurt until well combined.
    2 cups plain Greek yogurt, 2 Tbsps honey
  • Reserve 2 tablespoons of the yogurt. You'll use 1 tablespoon for the blueberries and 1 tablespoon for the strawberries.
  • Divide the remaining yogurt evenly among the popsicle molds, filling each about one-third full. Gently tap the molds on the counter to remove air bubbles.
  • Blend the blueberries until mostly smooth. Stir in 1 tablespoon of the reserved yogurt, then divide the mixture evenly over the yogurt layer.

  • Blend the strawberries until smooth. Stir in the remaining tablespoon of yogurt, then fill each mold to the top.

  • Tap the molds once more to release any trapped air. For a slightly marbled effect, gently swirl each popsicle with a popsicle stick.
  • Insert the popsicle sticks and freeze for at least 4 hours, or until completely firm.
  • Optional: Instead of layering, combine the yogurt with both fruit purees after blending and fill the molds with the mixed berry yogurt for creamy popsicles with berry flavor in every bite.

Notes

  • Honey-flavored Greek yogurt can be used in place of plain yogurt and honey.
  • Frozen blueberries and strawberries work well—just thaw them first.
  • Store popsicles in the freezer for up to 2 months in an airtight container or freezer bag after unmolding.
