These ladies are on their game with every single delivery! I’ve been gifted salads topped with everything from beef carnitas, steak and grilled salmon to flavors inspired by Mexico, Asia, and beyond. And don’t get me started on the creative artwork some of the salad containers are adorned with (mind blown emoji here). I’m hoping this might inspire you to start your own salad club! Peaches – Fresh, ripe peaches bring a natural, juicy sweetness to the vinaigrette. Frozen, thawed peaches work just as well, making this recipe accessible year-round.
-
Fresh Basil (not pictured above)– Adds a bright, peppery flavor that pairs beautifully with peaches.
-
Olive Oil – The silky backbone of the vinaigrette, balancing flavors and adds the smooth texture you want in your dressing.
-
Apple Cider Vinegar – Provides a bright, acidity that complements the peaches. You may use white wine vinegar or even rice vinegar but the tang of cider vinegar works so well with the peaches and basil.
-
Honey – Naturally sweetens the dressing and helps to mellow the tang of vinegar.
-
Soy Sauce – A savory, umami-rich ingredient that deepens flavor of the dressing.
-
Dijon Mustard – Gives a subtle tang and creaminess, plus helps emulsify the vinaigrette so it stays blended.
-
Garlic – Adds a perfect aromatic punch.
-
Salt & Pepper – Simple seasonings that enhance and balance all the other flavors.

How to make Peach Basil Vinaigrette-
Making this Peach Basil Vinaigrette couldn’t be easier! Just toss everything except the basil, salt, and pepper into your blender or food processor and blend until smooth. Then add the fresh basil, a pinch of salt, and some black pepper. Give it a few quick pulses to mix it in, highlighting the basil flavor. Taste, adjust if needed, and pour into your favorite salad carafe or serving bowl. The dressing may start out a bit thick, so adjust with more vinegar, some water, or oil before pouring. If using for a marinade, I suggest leaving it thick.

Notes
- Frozen peaches work beautifully in this recipe, but should be thawed so the dressing is smooth after being processed. Canned peaches are also a viable option.
- I highly recommend adding a good amount of fresh black pepper to the dressing. The pepper compliments the basil very well.
- This dressing is fabulous as a marinade for meat or fish, as well. The dressing starts out a bit thick and the thickness makes for a perfect marinade to use for an hour or overnight, depending on the protein. Chicken and shrimp shouldn't marinade more than an hour or so, but beef or pork can handle the marinade overnight in the fridge.
- Other vinegars that work well in the dressing include white balsamic or rice vinegar. Cider vinegar gives a nice tang and is something most people already have in the pantry.
