Blitz Torte
Blitz Torte is an impressive presentation for sure, and the flavor is even more impressive. A layer of meringue gets baked right on top of yellow cake batter (fabulous) and the filling is a combination of sweet whipped cream, fresh raspberries and tart lemon curd. My recipe offers a homemade lemon curd, but use good-quality purchased curd with excellent results. Slivered, toasted almonds are baked into the meringue layer as well. This recipe will be one of the best and beautiful cakes you’ll ever make. It takes a bit of time, but is well worth your effort.
Gluten-free Chocolate Cake
Super Moist Chocolate Cake is exactly as described, super-moist and yes, it’s also gluten-free. There’s no need to tell anyone about the gluten-free part because it promises to be the best chocolate cake you’ve ever had. This particular gluten-free method is super different, some might even say, weird. But it’s incredible. Instead of flour of any kind, the recipe calls for cooked and cooled white quinoa in the batter. The completed quinoa is blended with the other wet ingredients in the recipe until it’s smooth and thick, then combined with cocoa powder and baked. This cake is delicious enough to serve naked, but I offer instructions for a whipped cream chocolate filling and perfect ganache for a glassy top. This is a not-to-be-missed recipe!
Carrot Cake
Carrot cake is a spring-Easter dinner tradition for many of you and this is aptly named The BEST Carrot Cake. Ali at Gimme Some Oven is like me and prefers her carrot cake perfectly spiced (cinnamon, nutmeg and cloves) with lots of fresh carrots but without nuts (but you can add some if you like). Not only is this carrot cake delicious with the cream cheese frosting, but it’s one super easy fool-proof carrot cake recipe.
Cream Puffs
All the other Easter Dessert recipes I’ve shared with you are amazing as promised or I wouldn’t have included them. But the ‘coup de grace’, saving the best for last and all that, is right here- My Aunt Pat’s Famous Cream Puff Recipe. This is what my family will be having this year at the end of our meal. I feel like I don’t need to tell you anything other than to check out all the comments on this recipe. Time and again, readers stop by after making the cream puffs, referring to them as “the best cream puffs we’ve ever had”. The combination of homemade whipped cream on top of the delicious custard can’t be beat. Plus, the presentation is adorable.
